Het middelpunt is de Marché des Enfants Rouges, verscholen achter een groen hek aan de rue de Bretagne — de oudste overdekte markt van Paris, al sinds 1615 in bedrijf. Sla de rij bij de Marokkaanse kraam over als je niet kunt wachten; ga in plaats daarvan naar Chez Alain Miam Miam voor een galette die hij samenstelt alsof het een klein architectonisch project is. Zaterdagochtend is het moment.
