Stap naar buiten en de ochtend begint smal: scooters die zich een weg banen door de rue des Rosiers, de luiken van de falafelzaken nog dicht, een rij die zich al vormt voor Sacha Finkelsztajn voor bagels met maanzaad. De stoep is oneffen, de gebouwen hellen lichtjes voorover, en tegen 10u rolt de galerie op de hoek van de rue des Francs-Bourgeois haar rolluik op.

Voor koffie loop je vijf minuten naar Café Charlot in de rue de Bretagne en neem je het tweede tafeltje bij het raam — steek dan over naar de Marché des Enfants Rouges, de oudste overdekte markt van Paris, waar het Marokkaanse kraampje een tajine maakt waarvoor het op zaterdag de moeite waard is om in de rij te staan.
