Stap naar buiten en de rue Montorgueil is al wakker — de visboer die het trottoir schoonspuit voor Stohrer, een bezorger die kratten voorbijrijdt langs Le Rocher de Cancale, de geur van boter vanuit L'Escargot nog voor je je koffie hebt gehad. Sla 's ochtends de toeristische wachtrij over en ga naar Terroirs d'Avenir in de rue du Nil — drie kleine winkels (bakker, groenteboer, visboer) die stilletjes de helft van de koks in de buurt beleveren. Haal een pain des amis en eet het al lopend op. Als je wilt zitten, vangt het terras van Café Compagnon in de rue Bachaumont rond elf uur het licht.
