Voor het middelpunt: de marché Navier, dinsdags en vrijdagochtends op de rue Navier. Klein — een stuk of twaalf kraampjes, doorgaans — maar de oesterman uit Cancale staat op de hoek en opent er een halve dozijn voor je om staand te eten, met een plastic bekertje Muscadet, nog voordat je hebt besloten wat er die avond op tafel komt.
