Stap naar buiten en je bevindt je op het raster tussen rue de France en de Promenade — bleke Haussmann-gevels, de geur van espresso uit het café op de hoek, een vrouw die een kleine hond uitlaat langs de gesloten luiken van een juwelier op rue Paradis. De zee ligt drie straten naar het zuiden. Je hoort haar voor je haar ziet, vooral 's ochtends vroeg voor het verkeer zich verdicht op boulevard Victor Hugo.

Voor koffie is er Emilie's op rue Alphonse Karr — flat whites, een goede pain aux raisins, het soort plek waar l'équipe de vaste gasten kent om 8 uur 's ochtends. Als je liever de Niçoise versie wilt, loop dan tien minuten naar Cours Saleya voor socca rechtstreeks van de koperen pan bij de kraam van Chez Pipo. Eet het staand, gevouwen in papier, voor het afkoelt.
