Rue Montorgueil starts a few streets away: the oyster stalls at L'Écailler, Stohrer's baba au rhum since 1730, Sunday mornings loud with the marché. Strasbourg Saint-Denis handles the metro side of things.

It sleeps three, though it's really a place for two — a couple on a long weekend who want Le Marais on foot and their own front door to close behind them. What stays with you is the silence, two floors above the noise.

Sortez et la rue Montorgueil est déjà en vie — le poissonnier qui arrose le trottoir devant Stohrer, un livreur qui pousse des caisses devant Le Rocher de Cancale, l'odeur du beurre de L'Escargot avant même votre premier café. Au nord de l'appartement, les rues se resserrent vers le Sentier à proprement parler, où les grossistes en textile font encore rouler leurs portants d'échantillons rue d'Aboukir à 8h.

Le matin, évitez la file touristique et rendez-vous chez Terroirs d'Avenir rue du Nil — trois petites boutiques (boulanger, primeur, poissonnier) qui approvisionnent discrètement la moitié des chefs du quartier. Prenez un pain des amis et mangez-le en marchant. Si vous préférez vous asseoir, la terrasse du Café Compagnon rue Bachaumont attrape la lumière vers onze heures.
