Step out and the Bordeaux you meet is low-key, residential — pale limestone façades, the sound of a tram sliding past on the Cours, someone wheeling a bike through a porte cochère. The boulangerie two doors down pulls its shutters up around 6h30, and by eight the queue is three deep for the canelés still warm from the mould.

For le marché, make it Marché des Capucins on a Sunday morning — Bordelais call it "the belly of Bordeaux" for good reason. Sit at Chez Jean-Mi, order a dozen oysters from the Bassin d'Arcachon and a glass of white Entre-deux-Mers, and you'll understand the city faster than any museum could manage.
