Make your morning the Cours Saleya. The flower market runs Tuesday through Sunday, the produce stalls earlier, and by 8h the vendors at the far end are already slicing pissaladière by the square. Take a slab, eat it standing up with a coffee from one of the café-tabacs lining the cours — that's the local breakfast, no plate, no fuss.
